I Promise...

{Hot Chicken Casserole} Yum Yum

See I told you I promised. Here it is:

2 Cups cooked chicken, chopped
2 cans cream of chicken soup
3 hard cooked eggs, chopped
1 cup diced celery
1/2 cup light mayo
3/4 cup cheddar cheese
1 Tbsp lemon juice
1 Tbsp dry minced onions
1/2 cup sliced almonds (optional)
1 1/2 cups cornflakes
1/2 cups potato chips
3 cups cooked rice (I cook 2 and that gives you a little more than 3 cups "cooked")
Crush together cornflakes and chips. Spread half in bottom of 8x8 pan (I've even used 9x13). Combine all other ingredients and pack into the pan. Sprinkle with remaining flakes.
Bake 450 degrees for 15 minutes. Serves 8.

Oooo yum! That sounds so good. I bet it would go great with turkey too
